Cooking the World with Our Favorite Bird

Is there a bird out there more versatile than the chicken? We doubt it (but are willing to consider alternatives). Whether you bake it, fry it, roast it, or grill it on sticks, there are so many great ways to enjoy this particular bird, and no matter where you go in the world, you’ll find someone cooking it up in a different—and, we’re sure, delicious—way.

Let’s start with Jamaica, where you can find this gingery chicken curry dish on breakfast tables around the island (can you think of a better way to start your day? Because I sure can’t). Next, check out this chicken pilaf from Azerbaijan, which has quite possibly the most perfect crispy outer layer we’ve ever seen. And what roundup of chicken dishes would be complete without some kind of heartwarming, soul-invigorating chicken soup? Puerto Rico’s sancocho does all this and more with noodles and plenty of hearty vegetables. Or go the ramen route. Really, chicken just wants you to be happy.
