Hello All,
"Respect is earned, but tea deserves it by default." - by me
Last weekend, I found myself at one of the city's most celebrated restaurants. The kind where reservations book months ahead and every detail whispers sophistication.
I was excited… until I opened the drink menu.
The wine section sprawled across three pages:
~ 2018 Bordeaux from Château Margaux, notes of blackcurrant and cedar, pairs beautifully with our lamb
~ 2020 Burgundy, earthy undertones with hints of cherry, perfect alongside duck confit
Every wine had its year, its vineyard, its personality laid bare.
Then I flipped to tea.
Black. Green. Breakfast.
That's it. Three words on half a line, tucked apologetically at the bottom like an afterthought.
I felt violated.
Where was the estate? The flush? The terroir that shapes every leaf? No mention of whether that "Black" came from the misty hills of Darjeeling or the robust valleys of Assam.
No tasting notes. No pairing suggestions.
Just... nothing.
The disrespect was breathtaking. Here we were, celebrating a drink with 5,000 years of history, reducing it to three generic categories while wine got the royal treatment.
I barely touched my meal. By the time I reached the office on Monday morning, I was determined.
"We're creating The Ultimate 2025 Tea Pairing Guide," I announced to the team. "Our tea lovers deserve better."
